If I cover a steal bar iguana cages 3 sides with wood will that keep the cage warm?

Yes, but you may have to cover more than just 3 sides, and it should be melamine-coated wood. You'll have to carefully seal the exposed edges, as well. Iguanas not only need a high humidity, which would destroy the wood, but they also blow salt out of their nostrils all the time.
